Recipes

This section I'll be adding to as I come up with new dishes.  There are lots of recipes out there and I'm not going to paste copies of other people's concoctions.  These will just be my originals...

Spicy Chunky Chili/Taco Meat (this can be eaten alone or wrapped in a lettuce leaf as a taco lettuce wrap) - serves 2

6oz (200g) extra-lean ground beef
1 10oz Can Diced Tomatoes with Green Chilies (Ro-tel style), not drained
1 Tbsp Mrs. Dash Fiesta Lime Salt-Free Seasoning blend
1 tsp Chili Powder
1 Tbsp dehydrated onion (or 3Tbsp diced fresh onion)
1/4 tsp garlic powder

Brown ground beef, blot out any residual fat with a paper towel.  Add remaining ingredients and cook on medium-high until excess water has evaporated, stirring often.  Serve hot.  So easy, so yummy!

Cucumber Salad
This is a modified version of a summer picnic staple in our house growing up.

2 Cucumbers, sliced thin (1/8")
1/2 Onion sliced thin
1/2 Cup Apple Cider Vinegar
8 packets of Truvia (Stevia)
Salt and Pepper to taste

Mix vinegar and stevia, pour over onion and cucumber, add desired salt and pepper, cover and refrigerate at least 4 hours.  After 2 hours, mix to make sure top layer marinates.  Enjoy cold!

"Buffalo Wings"
OK, you can't have real Buffalo Wings because first, dark/wing meat is too fatty and frying is out of the question!  But, you can have the next best thing!  Super fast, 2 ingredients and you'll be forgetting you're even on a diet!

1 Hillshire Farm Grilled Essentials Grilled Chicken Breast (plain variety)
Buffalo Style Tabasco Sauce

Microwave the chicken breast for 1 minute, carefully remove from packaging and slice in to 1/2" strips.  Add a few shakes of Buffalo Style Tabasco Sauce  and turn piece to coat - that's it!  You'll savor every bite!

Indian Style Cabbage - serves 2

1/4 head of green cabbage, chopped
1 tsp Mustard Seed
1/2 tsp cumin seed
1/4 tsp ground Coriander
1/8 tsp Tumeric
Dash of Cayenne Pepper

Mix spices and pour over cabbage.  Add everything to a Ziploc zip'n Steam bag (or place in microwave-safe bowl and cover with plastic wrap) and microwave for 8 minutes.

Lemon Dijon Chicken - serves 2 (with enough sauce for another serving for 2)

2 fully cooked 3oz Chicken Breasts (or 6oz cooked, diced chicken)
1 Tbsp Lime Juice
2 Tbsp Lemon Juice
4 Tbsp Dijon Mustard
1/2 tsp Ground Black Pepper
Cajun Style seasoning to taste

Heat chicken for 1 minute in the microwave.  Mix remaining ingredients and heat in microwave 30 second.  drizzle 1/4 of the sauce over each serving of chicken and serve.  Refrigerate remaining sauce for next time!
